In case you missed it, yesterday was the Iowa Bacon Festival. Now, I don’t know about you, but when I first stumbled across this article, it took me about 5 minutes to come to grips with the fact that there is actually a festival entirely devoted to bacon (of all things). During this festival, attendees were presented with the opportunity to attend “Bacon Educational Lectures”, taste unlimited bacon samples from around the world, and meet members of the Iowa Bacon Board. A recent study completed by Consumer Reports revealed that many raw pork samples contain Yersinia enterocolitica, a harmful bacterium that causes abdominal pain, gastrointestinal illness, vomiting, and diarrhea in humans. A shocking 69% of all pork samples tested during the study were tainted with the bacteria, and it was also discovered that a large percentage of the bacteria found in the pork was resistant to antibiotics which would suggest that the current methods of safeguarding meat from bacterial contamination are insufficient to cope with evolving mutations.
